2022 Gouais Blanc
Gouais Blanc pronunciation: Goo-aaay Blahn
This is a white wine with higher acid making it a wonderful pairing to seafood dishes, especially with oysters. We are the first winery in North America to grow and produce this rare, ancient Euorpean grape. DNA testing shows Gouais Blanc is the parental variety to over 80 different grapes.
Tasting notes
Known for its high acid, this wine is a great choice with raw oysters or ripe cheeses. It is well balanced with lemon meringue pie and line dried linen on the nose as well as golden hay and some wet stone minerality. More floral notes of white tea and magnolia blossoms persist as the wine opens up. On the palate, there is a nice textured nature to the acidity and a sweet fresh mead character that rounds out the finish.
Production notes
The fruit was hand-picked and gently whole cluster pressed. The juice was cold settled for one day before being clean racked and inoculated. The fermentation took place in a concrete egg tank to soften the acidity and promote minerality. The wine was aged in French oak barrels for three months, one of which was only used once before for a kiss of oak flavor and body.
