Ratafia is the serendipitous result of an experiment suggested by a visiting winemaker, Daphna Kadim.  Ratafia is a liqueur commonly made in France, Spain, and Italy, each region having it's own style of wine-making.  In our case, we borrowed the "Champagne-style" Ratafia, arresting a barrel fermentation of rosé by adding grape spirits, preserving 13% residual sugar and increasing the alcohol to 18.1% for stability.  We believe this abrupt end to fermentation preserves some of the early fermentation esters, giving it aromas of freshly pressed juice and marzipan.  With a bright palate, Ratafia can be served as an aperitif, or with dessert such as panna cotta, or cheeses.
